Phylum Bacillota (Firmicutes), Class Bacilli, Order Lactobacillales, Family Lactobacillaceae, Genus Pediococcus, Pediococcus

Gram-positive cocci, 0.6-1.0 µm in diameter, occuring singly, in pairs and tetrads.
Non-motile. Non-spore-forming.
Colonies are greyish white, low-convex, circular, entire, opaque and about 1 mm in
diameter after 24 hours cultivation on MRS agar at 37 ºC. Growth occurs at 13-44 ºC,
optimally at 30-37 ºC. Optimum pH for growth is 6.0-6.8; no growth at pH 3.8 and 8.2.
No growth in 10% NaCl. Tolerant to 10% ethanol. Facultatively anaerobic.
Isolated from a distilled-spirit-fermenting cellar in Hebei Province, China.
