Phylum Bacillota (Firmicutes), Class Bacilli, Order Lactobacillales, Family Lactobacillaceae, Genus Pediococcus, Pediococcus
damnosus Claussen 1903 - type species of the genus.
Gram-positive cocci, 0.5-1.0 µm in diameter, occuring singly, in pairs and tetrads.
Non-motile. Non-spore-forming.
Colonies on agar surface develop poorly unless are incubated anaerobically. Growth
occurs in the range of 8-30 ºC. No growth occurs at 35 ºC; some strains grow in the
presence of 4% or 5% NaCl. The final pH in broth is about 4.0. Optimum pH for
growth is 5.5; no growth at pH 8.5.
Isolated from lager beer yeast. Produces the bacteriocin pediocin PD-1 with antibacterial activity.

alpha-D-mannoside, mannitol, melibiose, raffinose, rhamnose, ribose, sorbitol, sorbose, starch, D-tagatose, D-turanose, xylitol and
xylose.
Variable results for acid production from galactose, lactose, melezitose, salicin, and sucrose.
